  • Rare gastronomic delicacies are best savoured when their provenance is traceable and their sustainability assured.  Caviar is perhaps one of the best examples of this credo for luxury consumption today, and nowhere is this more apparent than at The Peninsula Hong Kong, which has played host to the city’s most decadent banquets for the past 85 years. The Grande Dame has seen the world’s finest “black gold” pass through her lauded kitchens. This fascinating class aims to build on the hotel’s storied gastronomic heritage with an educational and informative look at our pick of the tried-and-tasted premium caviars today, determined by the hotel’s expert chefs.

In a bid to hone your gastronomic lexicon as well as your palate, this class focuses on caviar provenance and sustainability. You will explore how today’s farmed caviars are harvested, their defining flavour characteristics and how best to enjoy caviar in all its glory.

    • How To Caviar
Enter the hallowed kitchens of The Peninsula, where a curated selection of the world’s finest sustainably -farmed caviars will be elegantly displayed on ice. From here one of the hotel’s expert chefs will invite you to actively participate in a gastronomic taste-test of each of the four caviars on display. You will learn to cultivate the acquired skill of subtly training your palate, and maybe even challenge your own perception of which caviars you prefer.
    • A Nose For Detail
Why do some varieties of premium caviar look like tiny black pearls, while others have a shiny gunmetal hue and a larger grain? And why is caviar naturally salty or buttery on the palate? Our expert chef will guide you through these questions to help you identify the flavour characteristics espoused by fine caviars, and the varieties of farmed sturgeon they originate from. This fun and informative component of the class will illustrate why different varieties have unique tastes and even textures, and how best to store and serve caviar to preserve its optimal characteristics.
    • Paired To Perfection
It’s not merely a Baltic wives’ tale that premium caviars pair excellently with smooth, refined vodka. Our chef will encourage you to try pairings of caviar with the world’s finest vodkas and also Champagnes, so that you can cultivate your own taste for how best to enjoy sustainably-farmed “black gold”.

The Art Basel Hong Kong fair has brought a new chapter to a city that is fast reinventing its identity to become the next international art hub. As big-name galleries seek to bring their works to fresh Chinese collectors via Hong Kong, local artists and galleries are pioneering new ways to connect with their audiences. With the "An Art Dialogue with Hong Kong" programme, The Peninsula Academy actively engages with the city's thriving contemporary art scene, delving into the fascinating themes artists are exploring today. The dialogue is led by an art expert; themes particular to Hong Kong - including superstition, feng shui and ancestral traditions - are drawn on during discussions around the social controversies of the day, and the ways in which these subjects have become such powerful sources of inspiration are explored.
