Engage your taste buds with flavours of the past in Chef Leung’s fragrant menu of culinary creations from times gone by. In preserving the traditional techniques and ingredients required to create these specialities not commonly found on modern-day menus, Chef Leung aims to promote the rich intertwined histories of Spring Moon and time-honoured Chinese classics. Creations such as chilled marinated pork knuckle jelly, braised garoupa belly with shredded pork and fried flour puffs, deep-fried boneless chicken wings stuffed with glutinous rice, and other enriching braised, claypot, and vegetable dishes promise to reignite memories from the past while inspiring taste buds for flavours to come.
